Creamy Spinach artichoke dip Pit-ZA

How genius making a pizza on pita bread...PIT-ZA! I had no idea it was a thing! Inspired by the Vegan Roadie youtube channel, this is a 10 out of 10 pizza. The rich, flavorful, sour creamy topping stands alone and is great with chips or crackers but makes an amazing pizza topper. A simple and easy recipe. The cashews need a day to soak so it just takes a bit of forethought!

1.5 Cup cashews

1.5 C water

Juice of 1 Lemon

2 garlic cloves

1.5 tsp onion powder

1 tsp salt

1 can of artichoke hearts

1 bag of frozen spinach that is thawed

Pita bread or Pizza crust

  1. Soak cashews 24 hours

  2. Drain cashews add to blender, along with lemon, garlic, water, and spices, blend into cream.

  3. squeeze out spinach super well. Press spinach against colander to drain all the water out.

  4. add spinach to bowl along with artichokes. Shred the artichoke hearts as you add them to the bowl.

  5. Pour cream over the spinach and artichokes and mix well.

  6. Serve as a dip or use as pizza topping and bake at 400 degrees until pita and toppings are golden. Optional to top with chili flakes.
